A quick and refreshing salad – a bit like a tabouleh actually but with quinoa instead. It is super easy to make, clean tastes and goes well with a grilled fish or roast chicken for example. Also served as a side dish for lunch.
1 cup quinoa
250g cherry tomatoes (cut in half or quarter)
half a cucumber (cut same size as tomatoes)
a small green pepper – or red or yellow
herbs: small bunch of mint and flat parsley – chopped
olive oil, salt and pepper to taste
How I do it!
Prepare the quinoa: 1 cup quinoa to 2 cups of water. cover and bring to boil, reduce heat and leave till all the water is absorbed. Turn off and leave the quinoa to rest and cool down. In a separate bowl mix the cut cucumber, cut tomatoes, chopped herbs. Once the quinoa is cooled down add to the salad. Make the dressing on the side: Lime juice, olive oil, salt and pepper to taste. I usually do 3tbsp oil to 1tbsp lime juice – but it depends on the acidity really. it should be a bit zinggy in my opinion – but not too much. I always add the dressing at last moment otherwise everything gets a bit soggy.
Et voilà! Very easy, super tasty and healthy as well! It can be prepared in advanced, just put in the fridge till you are ready to serve.
